Use Confluent CLI in "aggregating count" and "aggregating minmax" demos
Description
Replace kafka-configs and kafka-avro-console-consumer with the confluent CLI. The CLI depends on Kafka REST, so we add rest-proxy as a dependency as well. To test, validated that the demo works as expected.
