Rename the project and packages

The current name and package of the project is not "cool", the package is long "com.impossibl.postgres" and it's not pretty, and since the project still not hit a 1.0 there is a chance to change that...

And it looks that the domain is not used, so what about a rename of project and packages from "com.impossibl.postgres" to "io.pgjdbc"?

This has been in the works for quite some time; including a move to the official pgjdbc projecy. Although, it's not super high on our list of things to do.

Better to rename "spy" into something less generic, like "pgjdbc-ng-spy". There can be a million other libraries named "spy", and the word "spy" doesn't really tell from the name, what this library is doing.
