The Info versus Infos debate is one that we had internally during the drafting process. You are absolutely correct to note that Information is an uncountable noun. However, in this case, it can be helpful to think of Info not as an abbreviation of Information, per se, but as the name of a certain type of defined unit (Exposure Info, Technical Info, etc.). There can be—indeed, there are—more than one of these units. As such, these defined units’ names would become Exposure Infos and Technical Infos.

Please know that, as a native English speaker, Infos isn’t particularly pleasing to my ears either! I recognise why you would raise this flag, and I appreciate that you have done so. However, having debated it within the company on several occasions, we are happy with our decision to retain the original in this case.
