review and update macOS prep and installation documentation

This documentation is somewhat old and may be way out of date. We need to review that and see if it still works and/or needs to be updated.

Also we should probably add a note that at the moment we should put in something to note that the ARM64-based macs don't yet support Malcolm until we get ARM64 support in (#389)
