Update JetPack documentation to cover JetPack 6.1

The situation is still a bit in a flux, but at some point we may want to update the documentation in https://github.com/icub-tech-iit/documentation/blob/master/docs/icub_operating_systems/icubos/jetpack.md?plain=1 to cover also the JetPack 6.1 case. This issue act just as a remainder for doing that (or to contain some preliminary documentation on this).
