[Bug] Syntax Highlight in the gallery app did not adjust its contrast on dark mode

Describe the bug

Syntax Highlight need to be updated to support dark mode contrast like WinUI3 Gallery for better accessibility.

Open the Source code expander > And look at the code on dark mode
