Change core tests from using the "askar" wallet type to either askar-anoncreds or kanon-anoncreds

With the deprecation of the askar wallet type, we need to transition the majority (all?) of the tests that are currently using the askar wallet. We don't need to remove it yet, but the primary testing and demos should use the newer code paths.
