Given that we talk about HTLC, shall we rename the exchange package to htlc? @HagarMeir , @mbrandenburger , @KElkhiyaoui

Since we are in the process of renaming to htlc (see #363) then I will wait for it to get merged and then I'll change the documentation accordingly.
