feat: Initialize user when spin api-service

Add automatic user email and password initialization on container startup

This update ensures that a default user email and password are set when the API service container is spun up. This eliminates the need for users to manually configure credentials on first access, streamlining the setup process.

This is align based on this issue https://github.com/hyperdxio/hyperdx/issues/7
