Make explicit and configurable for how long HyperDX keeps data

I assume that the duration to keep the data is a setting in ClickHouse which is not "immediate" to change... possibly we could at least create an env var when creating the all-in-one-container which lets the user set that data?

eg a simple HDX_INITIAL_KEEP_DATA_PERIOD variable we could set for 30 days instead of 3 or whatever is the default?
