Document colors and other useful CLI flags in README

See last comment in #185: we can't really specify things like "use colors in output" in the config itself because we do not have a good way to override that (they're not "defaults," just settings), but having colored out put and having the ability to include sniff rules in output are both useful things for making PHPCS more helpful, and we should document them.
