Ecobee thermosat documentation does not mention away and away_indefinitely presets

https://github.com/home-assistant/core/pull/108636 introduced new away and away_indefinitely presets for Ecobee thermostats instead of the non-conforming Away preset. The documentation does not mention the difference between the two, and the explanation in the PR itself is pretty confusing to a user.

Also, the use of language can be considerably improved to clarify the Ecobee modes.
