[BACKPORT v1.0.7] - Specify exact containerd version

Is your feature request related to a problem? Please describe. In https://github.com/epiphany-platform/epiphany/issues/3164 we allowed downgrade of contained packages (v.2.0.1 and v1.3.1) As discussed with @seriva and @przemyslavic it would be good to have a hardcoded version of containerd package in v1.0 LTS. Currently, the latest available is being installed.
