Add metrics to ordhook's `ping` endpoint

In order to get a quicker status of how ordhook is doing, these metrics would be helpful on the ping endpoint:

1. Last block indexed
2. Latest inscription id
3. Latest ordinal number

To improve our Ordinals dashboard.
