It would be great if we could feature gate stacks in chainhook, so we avoid pulling stacks related dependencies when using the chainhook-sdk in bitcoin-only projects.

Nice, this would be great pre-Bitcoin++. I can investigate.

If we do a refactor in the future where Stacks and Bitcoin are more decoupled, this ticket may be worth picking back up. Tabling for now as it's not a priority.
