Axios response intercept not working

Describe the bug The response intercept is not producing logs

To Reproduce Steps to reproduce the behavior:

1. run server.js
2. try going to test/post
3. Only request is printed

Seems like an issue with axios version - https://github.com/axios/axios/issues/4012
