Expose values from originalNodeConfiguration.json for customization

Problem

The values from originalNodeConfiguration.json override application.properties and prevent the user from being able to configure values like chainId.

Solution

Add a way to enable customization of the properties in this file.

This section of the readme should be updated to describe the latest changes.
