AdminUI UI Improvement - Jurisdiction->Location->Hours->DOW input type

When editing the long-form hours that a location is open, there are currently drop-down select boxes for "true" and "false" regarding whether or not that date/hour span applies to a specific day of week. They're set to false by default, and cannot be set via the keyboard (you have to use a touch device to change their value).

It would improve speed tremendously if 1) Mon-Fri were set to true by default, and 2) those were changed from drop-down select boxes to check boxes, and 3) the controls could be toggled using the keyboard.

Issue relates to v1 of the project. Currently not pursuing this format of the product.
