Plex logging in Loki

Details

What steps did you take and what happened:

Currently to examine Plex logs you must either have the console open at all times and capture the time of error, or you must manually get the zips and analyze the logs by hand. This is a PITA and leaves errors in an undiagnosed state where I don't have a enough time for the annoying dance to find the error as opposed to just doing a search like with the rest of my logs.

Promtail was previously configured to send Plex logs to Loki. After switching to vector I wasn't able to lift the logs up easily. It's doable. I just need some free time to do it.
