[bug] Guardrails server crashes on v0.5.12

NOTE: with v0.5.12, we introduced a bug where enabling metrics using guardrails configure will cause an error to be thrown on guardrails start. The fix for this for now is to roll back to v0.5.10, or to disable metrisc in guardrails configure. We'll hotfix this with 0.5.13 tomorrow
