which traffic Orbot does not drop and is transmitted without the proxy?

I use orbot but I'd like to read a documentation about the possibility that information may be transmitted without the proxy. Is it documented anywhere of an application that can bypass orbot tunneling? I am not claiming it can be done but I'd like to read a detailed documentation about what orbot protect against and what can circumnvent orbot mode.

As for proxy no app is mandated to use the proxy. As for VPN it is the opposite, it is impossoble to escape it.
