We have a similar request https://github.com/GNS3/gns3-gui/issues/3143 however we need to consider it due to security concerns.

Hi, You should be able to do this already if you go to File -> Edit project and tick "Leave this project running in the background when closing GNS3". 
I remember that using an Ethernet adapter directly on Linux can result in low throughput. I would try with a TAP interface to see if you have the same behavior....
