Copyright year updates automatically

Resolves #59

I made the copyright "to" year update automatically based on the current date.

I'm not too familiar with copyrights, so I'm not sure if this needed to be fixed. It's my first time contributing to an open-source project and this issue looked like an easy start so I figured I'd give it a try 😄

It looks like something went wrong with the build. I'm not sure what happened, I was able to build and run the project locally.
