[v0.1] Use more DIY friendly packages

All of the components on the board are available in larger/coarser packages than the v0.1 design. Switching to 0603 min passives and replacing BGA/CSP packages with QFN/DFN would make the board easier to assemble and examine while not making it much larger.

Aye... I wanted to build this but PCBway barfed it back out saying the clearance is too small (minimum 0.1mm, but wider is much cheaper). Board seems to have 0.08mm. Would much prefer a larger board that omits USB/Thunderbolt passthrough, something simple that just lets me intercept USB-PD data, something just in my personal toolkit to help observe the invisible (and sometimes problematic) things that devices do...
