Grails 7 - plugin-ui needs updated to latest js dependencies

Issue description

plugin-ui has not been updated to the latest js dependencies. See commits:

  • f5e348d354903c5428bb932aacc2c0d483b3a5c0 - initial work
  • 44a17cf1dbe2f4f493729515ed5cfcdd50e38855 - revert after discovering the scope

Also note that there are several existing errors of not being able to find various css/js files without any upgrades. Significant test failures occur (likely due to the bootstrap / datatables upgrades) so the html needs updated to work with the newer dependencies.
