Update logback-groovy-config feature to be compatible with Grails 7

Need to exclude groovy 4 dependencies, until a new release of io.github.virtualdogbert:logback-groovy-config

Also https://virtualdogbert.github.io/logback-groovy-config/#getting-started only shows support up to logback 1.4.x
