Docs: document how to remote write metrics to Grafana Mimir

In the Grafana Mimir Slack channel, an user asked how to configure Loki to remote write metrics to Mimir and we didn't know (see thread). They eventually figured out, but would be nice to explain it in the Loki documentation.

Hello it seems this thread is no longer viewable. I'm facing issues doing remote_write to mimir but none with Prometheus.
