Port from gson to kotlinx-serialization?

Would there be interest in me contributing a gson to kotlinx-serialization migration? That could also help to work around https://github.com/gradle/foojay-toolchains/issues/99.

Hey @sschuberth ,

Why not - although I would do that after 1.0.0 is out.

If it could reduce the shaded JAR size that would be great. If it blows it up too much, maybe not.

If you are OK to try, without saying it would go in 100%, you are welcome to do so.
