Add more collateral around automatic wifi interface discovery

The automatic wifi discovery is not guaranteed to succeed and people are getting confused when it fails. So this ticket is to add:

• more documentation about what / why this is
• more documentation about how to explicitly set the interface
• more logging for the fail case
