docs: Callouts are hard to read

The new dark colours has made some of the callouts hard to read. Most notable with highlight and note on the guided remediation page

We should adjust the colours on these.

Note Blocks seem to have been fixed, I've pushed a change for the highlight callout blocks at #2106
