feat: convert to esm

I think I have the basic stuff figured out, it's now just down to making eslint actually work.

Oh joy I have this down to this error:

Error [ERR_REQUIRE_ESM]: require() of ES Module /private/var/folders/5s/5qx4kx9n4f3d_ktmjm4rqgsr0000gq/T/tmp-56587-TNUkGLbhzuKi/kitchen/node_modules/gts/build/src/index.js from /private/var/folders/5s/5qx4kx9n4f3d_ktmjm4rqgsr0000gq/T/tmp-56587-TNUkGLbhzuKi/kitchen/node_modules/@eslint/eslintrc/dist/eslintrc.cjs not supported.

I don't know if eslint plugins support ESM ... like at all.
