Update engines in package.json to only allow Node version 14.x.x.
Describe the bug:
When using node version 16 LTS, errors related to not finding correct packages are reported when running npm install
. While updating these packages may resolve these issues, the simpler solution is to ensure the developer is using the current available

Resolution:
Update engine configuration in package.json to only allow Node 14.x.x. (until we have a fix for Node 14+)
