Workaround: connect to Plex servers with HTTP disabled

I have confirmed that everything works with HTTP but not with HTTPS. Unsure why but for those who are also having this issues you can deploy Stunnel https://www.stunnel.org/.

Stunnel Config [plex-MM-proxy] client = yes ; IP address and the port you want to use for your magic Mirror. This is only to be used for Magic Mirror not for Main Library Sharing. accept = 192.168.1.50:32444 connect = 127.0.0.1:32400
