Clean up root directory

Our root directory is a little dirty, making it a chore to scroll down to the README on the GitHub repo home page. Many of these files can go somewhere else without any consequences, e.g. docker-compose-production.yml, and some can be removed, e.g. appspec.yml (I think we ported this config to be stored on AWS) and Guardfile (not even sure guard works anymore).
