Add example for using `persistentvolumes` for Grafana config

Also make sure this works across restarts. We've seen some problems on one setup..

After the first restart of my Kubernetes cluster, I couldn't see any Data source or dashboard configured in Grafana. I have currently no idea how to update this addon to have the config being persistent. Does someone else encountered this issue?
