Using `uv` instead of `poetry`

For Python package installations, one could use uv instead of poetry - it would accelerate the installation process a little bit (uv is 10-100x faster than poetry). I could help with setting up uv.

We agree, we have made the decision to move from poetry to uv, when we get to it is a matter of when we have time to commit to doing this (we are a small team).
