Change timezone in umbrel - HELP !

Please help, in my purchased umbrel home how can I change the default time zone setting to : TZ=Eurpoe/Warsaw

I keep having problems with nodered automatization, different addons read the time differently.

Currently I changed in the terminal, but it did not change everywhere :
