Rename to sentry-agent

We want to treat the project as more of a requirement for production installs, and less of a performance optimization. It won't actually be required, but we'll start shifting primary features into this platform rather than trying to reimplement them in every single client.

As part of that, it seems to make sense to rename the project to be more accurate with a larger goal.
