Include info on Privacy/Masking + Network Req/Res on Set Up Session Replay Docs

i know we have mentioned this previously, but I think as part of our onboarding improvements its worth adding a paragraph on the "set up session replay page" about masking / privacy config, and additionally I think network request/response also deserves a callout as well
