clarify expo updates sourcemaps for bare react-native app

Clarify on the docs that expo-upload-sourcemap can be used for bare react native apps using expo-update.
Example for manual upload was missing sentry url env var
Example doesn't need any env var besides SENTRY_AUTH_TOKEN
Added new example setting all env vars which is required for bare workflow
Added note saying env vars take precedence over plugin config
Why: I use expo updates on a bare app, so I don't use the expo plugin. Docs are not clear that a expo-update release sourcemaps can be uploaded if you use the bare workflow (no expo plugin). Was about to fork the script then noticed it only tries to load plugin config if either url, project or org are uset.
