Structured Logs: Logs for crashes

We need to ensure that Logs are persisted/flushed correctly so that unsent Logs don't get lost when the app crashes.

@buenaflor correct - in our Linear issue, I marked this as blocked by the iOS+Android issues, and I created separate ones to refer to them on the docs for easier tracking
