Restore Carthage support for SentrySDK

Problem Statement

Description

Cocoapods is officially deprecated, which means there is no alternative dependency manager except SPM, which contains a lot of issues for remote packages, and many teams don't intend to switch to it any time soon.

Therefore, I'd like to raise a feature request about bringing back the Carthage support that is used to manually pre-build a project as xcframework with custom xcconfigs.

For instance, we build statically for one platform, and dynamically for another (e.g., iOS vs Mac).
