Add option for bind-mounts

Problem Statement

I prefer to use bind-mounts instead of docker managed volumes. It feels more safe to be able to eg. backup a complete directory structure instead of having all in docker volumes. Also there is always the risk that you accidentally delete a volume you shouldn't..

Has there been any thoughs in adding support for such option?

No, but you're free to modify the Docker Compose file with an override file (see https://docs.docker.com/compose/how-tos/multiple-compose-files/merge/).
