What is the setting that controls viewable page templates?

Hello, I can hardly set page templates.. I get the below screenshots, this defers from a page to another. How can I control which one I want it to appear? I want to set a page as (info) or (gallery), but can`t set it, as the other one appears instead.

You can override the page template field in custom blueprint for the page type you are working on. You can then provide the list of specific templates you want in that field.
