[FEATURE REQUEST] Plot region of interest contour by default in visualization notebook

Paraphrased from J. Wilson:

In the visualisation notebook, default should be to draw the black contour around the region of interest for more/all fields: prior, posterior, state vector, scale factors, avkern.

Some of the pixels are white so it can be tricky to know the boundary without plotting the contour.

Easy fix: mask=mask where applicable

@msulprizio I think that we only show the outline on select fields, but for fields we don't we mask out areas that are not in the region of interest. Safe to close this issue I think.
