Is there a way to add an energy dependent morphology description?

e.g. a gaussian extension which decreases with energy?

No, this doesn't exist.

Long-term, we should define model serialisation formats at gamma-astro-data-formats and then use those formats in gamma-cat (and science tools).

For now, what I do in cases where we have information that's not part of our schema, is that I put it in a comment with a "TODO" marker that this should be added in the future.
