I had originally opened this with the intent of needing it before #242, but given the headaches involved with iris, I'm going to kick this to v2.0 and xarray.

Conda-forge has been updated to require Python 3.7 or greater (https://github.com/conda-forge/tobac-feedstock/pull/18), so this issue is now complete.
