Update Eyecite Documentation to Reflect Latest PR Changes

Description: After merging PR 200, we need to update the documentation to reflect the changes introduced. This includes improvements in citation parsing, handling of reference citations, and targeted processing of HTML.

It will certainly be a hidden feature for users - that one can pass in a resolved case name and reprocess the plain text to extract out reference citations otherwise.

@grossir can you make those changes

I updated the README in this PR https://github.com/freelawproject/eyecite/pull/207 But given the new changes, we will have to update it again
