How does one go about generating a pdf from a scribble document?

Ah okay, .overrideAttrs on postInstall phase might do it.

If it is in a proper racket package with an info.rkt, and if you call racket -I scheme/init -l- scribble/run.rkt (stolen from the scribble launcher) rather than scribble, it might work -- because installPhase puts the racket configured for the currently building package on $PATH.
