Rails 7 support

👋 Thank you for this wonderful library that we have been gratefully using for years at Wrapbook! We are in the process of upgrading to Rails 7 and noticed you could use some help (possibly with a pr 😉) and so I wanted to start up the conversation! I'm sure there are changes here you don't we can take care of that together 🦾

Overall changes

  • Add Ruby 3 and 3.1 to Travis
  • Add Rails 7 to the test matrix
  • Switch rails.master to rails.main to reflect their new branch name
  • Default to rails 7

Some of the misc stuff is an artifact of using a current PR on the repo for inspiration to also add Propshaft support, but I'll clean that up here shortly.
